Easy Vegan Cauliflower Shakshuka, Gluten-Free
What are they? By definition, they are customs or beliefs that have been passed down from generation to generation.
My parents were born in Vietnam but we are both Vietnamese and Chinese. Growing up, I have always been able to enjoy a mixture of cultural foods where my mom inherited her cooking skills from my grandmother. I love being able to taste a dish knowing the recipe has been passed down by my great grandparents or from another’s culture.
Because of my love for cultural foods, when going out to eat, I always seek to try something new like Turkish food. I happened to have worked at a Turkish cafe before and fell in love with not only their food but their culture as well. One of their most popular dishes was shakshuka. I was craving some recently and made my first Vegan Shakshuka with cauliflower. You can also replace it with other vegetables.
This Vegan Cauliflower Shakshuka is:
Easy and simple to make
Uses only 8 ingredients (not counting salt and pepper)
Requires about 30 minutes
Vegan and gluten free
Great for breakfast or brunch
Great for 1-2 people.

2 cup cauliflower florets
1 small onion diced
1 cup crushed tomatoes
½ cup vegetable broth
1 tbsp tomato paste
1 tsp paprika
½ tsp chili powder
Salt and Pepper to taste
¼ cup basil shredded
Optional: ¼ tsp cinnamon (brings a hint of sweetness), bean/tortilla chips
Preheat oven to 375F. Drizzle cauliflower florets with olive oil, salt and pepper. Bake for 25 minutes.
Heat a pan with olive oil. Add onions and saute until fragrant.
Add crushed tomatoes, tomato sauce, and vegetable broth. Let it simmer for about 5 minutes on low heat.
Add paprika, chili powder, cinnamon (optional), salt and pepper.
Turn off heat and add basil. Top with roasted cauliflower and chips to serve if desired.
