Healthy Chocolate Coconut Pancakes, Gluten Free, Refined Sugar-Free

These pancakes are easy to make and perfect for breakfast and the weekend brunch. They are:

Ingredients

  • 1/4th cup coconut flour

  • 1 1/2 tbsp cacao powder

  • 1 large egg, plus 1 egg white

  • 1/2 cup cashew milk

  • 1/4 tsp baking powder

  • 1/4 tsp salt

  • 1/2 tsp vanilla extract

  • Optional: top with desired toppings

Directions

  1. Mix all the dry ingredients-flour, cacao powder, baking powder, and salt together in one bowl.

  2. In another bowl, mix together the wet ingredients- eggs, milk, and vanilla extract. Slowly pour in the dry ingredients. Combine and let sit for 5 minutes.

  3. Pour into pan 1/4th cup at a time on low heat until it is cooked.

  4. Top with desired toppings.
