Healthy Chocolate Coconut Pancakes, Gluten Free, Refined Sugar-Free
These pancakes are easy to make and perfect for breakfast and the weekend brunch. They are:

1/4th cup coconut flour
1 1/2 tbsp cacao powder
1 large egg, plus 1 egg white
1/2 cup cashew milk
1/4 tsp baking powder
1/4 tsp salt
1/2 tsp vanilla extract
Optional: top with desired toppings
Mix all the dry ingredients-flour, cacao powder, baking powder, and salt together in one bowl.
In another bowl, mix together the wet ingredients- eggs, milk, and vanilla extract. Slowly pour in the dry ingredients. Combine and let sit for 5 minutes.
Pour into pan 1/4th cup at a time on low heat until it is cooked.
Top with desired toppings.
