Healthy Cassava Flour Banana Bread, Paleo, Gluten Free, Vegan, Refined Sugar-Free

Who doesn’t like a good slice of banana bread? This banana bread is:

  • paleo

  • vegan

  • gluten free

  • refined sugar free

  • simple and easy to make

  • perfect for breakfast or as a snack

  • 1 cup cassava flour

  • 2 medium ripe bananas, mashed

  • 1/4th + 1 tbsp coconut oil, melted

  • 3 flax eggs (3 tbsp flaxmeal + 7.5 tbsp water)

  • 1 1/2 tsp cinnamon

  • 1/4 cup maple syrup

  • 2 tsp baking soda


  1. Preheat oven to 350 F. Line a bread pan with parchment paper.

  2. In a medium bowl, combine cassava flour, cinnamon, and baking soda.

  3. In a separate bowl, combine bananas, coconut oil, flax eggs, and maple syrup. Slowly add in dry ingredients. Top with extra bananas if desired.

  4. Bake for 20-25 minutes until center is set. Let cool before slicing.
