Healthy Cassava Flour Banana Bread, Paleo, Gluten Free, Vegan, Refined Sugar-Free
Who doesn’t like a good slice of banana bread? This banana bread is:

simple and easy to make
perfect for breakfast or as a snack

1 cup cassava flour
2 medium ripe bananas, mashed
1/4th + 1 tbsp coconut oil, melted
3 flax eggs (3 tbsp flaxmeal + 7.5 tbsp water)
1 1/2 tsp cinnamon
1/4 cup maple syrup
2 tsp baking soda
Preheat oven to 350 F. Line a bread pan with parchment paper.
In a medium bowl, combine cassava flour, cinnamon, and baking soda.
In a separate bowl, combine bananas, coconut oil, flax eggs, and maple syrup. Slowly add in dry ingredients. Top with extra bananas if desired.
Bake for 20-25 minutes until center is set. Let cool before slicing.
