Mini Pumpkin Spiced Breakfast Cakes, Gluten Free, Paleo
Breakfast has always been my favorite meal during the day. I love waking up and being able to fill my empty stomach with delicious food. How many of us walk out the door without eating breakfast because we are either in a rush or do not know how to? We want to make a healthy breakfast, but have no time to do so. However, Birch Benders pancake/waffle mixes may save the day. I have never been a boxed pancake/waffle mix kinda girl. I love making everything by scratch, being able to mix all the ingredients together and see the transformation. Nevertheless, I was SHOCKED by how good Birch Benders’ mixes are. They are simple to make and so delicious.
I love being able to tell the story of a brand. Birch Benders was created in the hopes of bringing people together to share a delightful meal. The mixes are made to decrease the process of cooking to allow us to slow down and enjoy the time with our loved ones or by ourselves. The two owners, Matt LaCasse and Lizzi Ackerman, started the company right after graduating college, moving to Colorado and getting married. Their goal is create products that are of high quality, convenient and tasty.
So what is Birch Bending?
“Birches are slender yet supple trees that will bend down and return you to the ground when you climb them, like a fishing pole under the weight of a catch. As a young boy in Maine, [the] founder Matt spent his summers bending birches. What did I proceed to make when I finally got a hold of these delicious mixes? Mini Pumpkin Spiced Cakes!
Servings: 10 mini cakes
Prep Time: 5 minutes
Cook Time: 20 minutes
Total Time: 25 minutes

1 package of Birch Benders’ Paleo Pumpkin Spice mix.
1 ½ cup water
1 tbsp greek yogurt (I used Siggi’s vanilla skyr)
Optional: blackberries, pomegranate seeds, pumpkin seeds
Preheat oven to 350ºF. Spray 10 mini tart pans with oil.
In a large bowl, pour entire package of Birch Benders’ Pumpkin Spice mix. Add water. Mix until no clumps are visible.
Pour batter into tart pans, leaving a little room.
Bake for 20 minutes. Take out of oven and allow them to cool. Top with greek yogurt and desired toppings. Enjoy!
