Paleo Pumpkin Spiced Banana Bars


I never truly liked cookie bars before. Even when I was a kid, I prefer to have cookies over cookie bars and sometimes brownies (gasp!). I was really picky when it comes to the texture of baked goods. I only like cookies that are soft and chewy, brownies that are fudgy and cookie bars that are not overly sweet. Don’t get me wrong, I enjoy the occasional crisp cookie or non fudgy brownie. To combine my love for everything, I decided to make these Paleo Banana Pumpkin Bars.

To say I was surprised by how good Birchbender’s pancake mixes (please not, I was not sponsored, just really liked these pancake mixes) are is an understatement. I have stayed away from box mixes for so long, believing that all boxed mixes contain highly processed ingredients and loaded with sugar. However, Birchbender’s mixes contain high quality ingredients, with no added sugar. They are rich in flavor and not overly sweet, having me hooked immediately. 1 package of Birch Benders’ Paleo Pumpkin Spice mix.
1 ½ cup water
Optional toppings: sliced bananas (can also use nuts, pumpkin seeds, granola, dried fruits)


  1. Preheat oven to 350ºF. Line a 9x9 pan with parchment paper.

  2. In a large bowl, pour entire package of Birch Benders’ Pumpkin Spice mix. Add water. Mix until no clumps are visible.

  3. Pour batter into pan. Add desired toppings.

  4. Bake for 20 minutes. Take out of oven and allow them to cool. Slice and enjoy!
