Healthy Cacao Gingerbread Cookie Dough Bites, Paleo, Vegan, Gluten-Free, Oil-Free

What is better than Gingerbread during the winter season? For fall it’s all about pumpkin for me, but come winter, bring on the gingerbread! As a little kid, my mom used to not let me eat cookie dough, thinking I will get sick eating raw food. However, naughty me would always sneak a bite when she is not watching. Who is with me one this?

To celebrate the holidays, I made these cute Cacao Gingerbread Cookie Dough. You can leave the cacao powder out, but I love the extra touch of chocolatey flavor with them. They taste exactly like gingerbread and I can’t be any happier.

  • 1 cup gluten free all purpose flour (can also use other flour) (I used Bob’s Red Mill)

  • 5 tbsp brown sugar

  • 2 tbsp molasses

  • 3 tbsp unsweetened applesauce

  • 2 tsp ground ginger

  • ½ tsp vanilla powder

  • 1/8 tsp salt

  • 1 tbsp cacao powder (I used Navita’s)


  1. In a medium bowl, mix together the flour, brown sugar, ginger, vanilla powder, and salt.

  2. In a separate bowl, combine the molasses and applesauce. Slowly pour into dry ingredients. Combine until everything is well incorporated without any clumps.  

  3. Chill the dough for at least 1 hour.

  4. Roll the dough into 13 balls (about 1 tbsp). Roll into cacao powder. Serve now or refrigerate until ready to eat. Hope you all enjoy!
