Coconut Matcha Cookies, Gluten-Free, Refined Sugar Free

6 tbsp coconut flour
½ tbsp matcha powder (I used Myencha’s)
1/3 cup honey
2 tbsp coconut oil, melted
½ tsp baking soda
⅛ tsp salt
¼ tsp vanilla extract
Optional: almonds for topping
Preheat oven to 350F.
Combine flour, matcha, salt and baking soda in a bowl.
In another bowl, whisk together melted coconut oil, honey, eggs, and vanilla extract. Slowly add in flour. Combine until there are no lumps. Top with almonds (optional).
Bake for 20 minutes. Let cool so it can set. Enjoy!
