Healthy Banana Oatmeal Cookies, Refined Sugar-Free

2 ½ cups rolled oats
1 cup whole wheat pastry flour (sub gluten-free flour if desired)
1 large ripe banana, mashed
½ cup greek yogurt (sub dairy free yogurt if vegan)
1/2 cup pumpkin puree
1 cup chopped dates
¼ cup coconut oil
1 tbsp baking powder
1 tsp salt
1 tsp vanilla extract
1 1/2 tsp cinnamon
Preheat oven to 350F. Line a baking sheet with parchment paper.
In a large bowl, mix all the dry ingredients- rolled oats, flour, baking powder, salt, and cinnamon together. Set aside.
In another bowl, mix together the banana, greek yogurt, pumpkin puree, coconut oil, and vanilla extract together.
Add dry ingredients to wet ingredients until well combined. Fold in chopped dates.
Roll dough into 24 balls.
Bake for 20 minutes. Remove and serve!
