Healthy Sweet Potato Popcorn Muffins, Refined-Sugar Free

Looking for a snack to eat while watching a movie? I have a suggestion-

Sweet Potato Popcorn Muffin


Fun Fact- the first time I ever went to the movies was when I was in 7th grade during Christmas🎄 My parents do not speak or understand English very well and with my mom being a little over-protective of me I didn’t get to hangout with my friends too late outside of schools. So my first movie theater experience was not until much later. The younger me was definitely mad at my mom for not allowing me to hangout with my friends more often but looking back now, I am grateful for her in loving me and always on the lookout for me.

Needless to say, I can not describe to you how excited I was that day. I went with my cousins and it was not a Christmas movie that we watched but a horror movie (yes, I love horror movies) called the Uninvited. I had lots of fun that day and being a little reminiscent, I made these Sweet Potato Popcorn Muffins. Have them as a snack while watching a movie or if you are like me, along with your meals.

  • 1 3/4 cups whole wheat pastry flour

  • 1 cup mashed sweet potatoes

  • 1 egg

  • 1 cup cashew milk (can sub for other types of milk)

  • ½ cup honey

  • 2 tbsp melted coconut oil

  • 1 tbsp baking powder

  • 1 tsp vanilla extract

  • 1 ½ tsp cinnamon

  • ¼ tsp nutmeg

  • ¼ tsp salt

  • 1 cup unsalted popcorn


  1. Preheat oven to 375ºF. Grease muffin pan or line with paper.

  2. In a bowl, mix together the flour, baking powder, cinnamon, nutmeg and salt. Set aside.

  3. In another bowl, mix together the sweet potatoes, egg, cashew milk, honey, coconut oil, and vanilla extract. Gradually add the flour into the wet ingredients until well combined.

  4. Optional: fold in some pieces of popcorn.

  5. Scoop into muffin pan leaving about ¾ of the way full.

  6. Bake for 15 minutes.

  7. Remove and top with popcorn.

  8. Put in back in the oven and bake for another 15 minutes are until toothpick comes out clean.

  9. Remove and let cool. Enjoy!
